Berry Oat Squares

Since it is so beautiful out, I figured I might as well bake. You would think the pouring rain would help break the humidity, but no such luck. I have tons of fresh blueberries and 1 container of raspberries to use. I was inspired by Jody from VegChic, so I opened La Dolce Vegan from Sarah Kramer (I think this is her best book) and made these babies. I doubled the recipe, because I had a lot of blueberries and her recipes are small.

I have made her apple walnut pudding and her pb and choc bars are fantastic, but I find they don't need as much sugar. They use rice krispies and are so yummy. The biggest surprise from the book, her Punk-kin Pasta. Uses pumpkin puree and veggie broth and is so savory. It calls for veggie sausage- so I made the tempeh recipe from VwaV- also fantastic as a topping on pizza. I make it with bow tie pasta.

The only thing I did differently was rather than use rasp jam, I took the fresh raspberries, microwaved them for 35 seconds and mashed them with some agave nectar. They came out really good. This is a yummy recipe. I still have another package of blueberries left and I think I am going to make pancakes for breakfast tommorrow. Here is a close up:













I pulled out my Candle Cafe Cookbook, which was a birthday gift last year from my friend Kris, right before we went there for dinner that night! We are one day apart and have been celebrating our birthdays together for many years. I also pulled out Dreena's the Everyday Vegan to make some things from these 2 books. I really want to try some of Dreena's vinagrettes since everyone raves about them.

Oh, Karen, those oat bars! Great stuff! And good for you to tweak the recipe and use agave nectar. I'm lovin' what I'm seein'. Hope the rain somehow cools things off in time! (I like the photo... it actually would be welcome for us here in SoCal.)

How is Penny dealing with the humidity and heat? Hope the both of you have a great weekend!

we had the same intense downpour here. I hate when it rains on a Saturday. :(

I like Sarah's books too. The tofu balls in LDV are really, really good. Some of the best "meat" balls I've made at home. I've heard good things about punk-in pasta, but I'm not a real big pumpkin fan. I might bite the bullet and give it a go though. Oh, oh and make the Cheeseburger Pizza. We were blown away with that one. The squares look mighty fine too. I've got some blueberries here too. Hmm....

Wow, that looks incredible! And I love the mashed raspberries mixed with agave nectar suggestions. The raspberry jam is what has turned me off of that recipe. I'll try it your way!

Nice, I bet the bars are better with fresh raspberries than with jam. I used Polaner all-fruit, but maybe I'll use fresh next time.

Your dinner from the restaurant looks yummy. I met my dad, his girlfriend, and my aunt/uncle for dinner this weekend. The corn was over cooked at the stinky restaurant they picked. That corn looks just right!

Penny looks like a sweet puppy. My friend up in Maine has the same type of dog. His name is Rufus...

I must make the bars with fresh raspberries. They look great! Penny is such a doll, no I mean "baby"... I know how you feel about that. We love our dog PUP also, we just suck at names.
